Last week was disturbingly hot around our neck of the woods – as a result I had to be creative in order to cope with the weather (which boiled down to basically hiding indoors near an air conditioner). Rather than merely collapse into a puddle in front of the TV, I wanted to keep energized, so I made quite a few batches of this tasty, healthy, and low cal Raspberry Chiller to help me along. So easy and not a big mess maker either. Here’s how it goes:
Grab:
1/2 cup frozen or fresh strawberries
1/2 cup frozen or fresh raspberries
3 tablespoons sugar
1 tablespoon lemon juice
1 cup crushed ice
1/8 cup sparkling water
Blend:
Combine all ingredients in a blender or food processor and pulse until almost smooth – we like it a little bit crunchy.
The key is to pour into a fabulous glass and garnish to make it feel extra special.
