Chicken guacamole sandwich: 
The best way to enjoy the chicken guacamole filling is to use flat bread. Like pita. Or you can flatten slices of loaf bread. It's something I realized from hindsight. I used pan de sal and the volume of the bread simply overpowered the delicate flavors of the guacamole. Still, the idea of stirring chopped chicken into guacamole is a good one -- something I picked up from an episode of Diners, Drive-ins and Dives -- and I do intend to make chicken guacamole sandwiches again but using the right flat bread even if I have to make the bread myself.
